"Tabbouleh" Salad

What You Need
 
2 cups instant white rice, cooked, cooled
2   tomatoes, cut in half, seeded and chopped
1 cucumber, chopped
1 bunch  green onions (about 5 onions), chopped
1 cup chopped fresh parsley
1/2 cup  finely chopped fresh mint leaves
1/2 cup KRAFT Zesty Italian Dressing
1/8 tsp.  black pepper
Make It
 

COMBINE rice, tomatoes, cucumbers and onions in medium bowl.

ADD remaining ingredients; stir. Cover.

REFRIGERATE at least 1 hour before serving.

" Yeah, so maybe it's not traditional Lebanese, but to be honest, all I wanted to make was a fast salad that uses up leftover rice. This one was really nice. I served it at a backyard barbecue last summer and noticed that all the women kept going back for more. It also keeps very well in the fridge. Use a garlic/herb dressing though, instead of the Italian one."
