Grilled Ginger-Lime Swordfish & Vegetables

What You Need
 
3/4 cup KRAFT Real Mayo Mayonnaise
2 Tbsp.  lime juice
1-1/2 tsp. finely chopped peeled gingerroot
1/4 tsp.  ground red pepper (cayenne)
4 swordfish steaks, 1-1/2 inch thick (2 lb.)
2   red, yellow or green bell peppers, cut into quarters
2 small zucchini, cut in half lengthwise
2 cups  hot cooked rice
Make It
 

PREHEAT grill to medium heat. Mix mayo, juice and seasonings. Remove 1/4 cup of the mayo mixture for later use; brush remaining mayo mixture evenly onto the fish and vegetables. Place on grate of grill; cover with lid.

GRILL 5 to 8 min. on each side or until fish flakes easily with fork and vegetables are crisp-tender.

SERVE over the rice; top evenly with the reserved 1/4 cup mayo mixture.

Substitute
Prepare as directed, using KRAFT Light Mayo Reduced Fat Mayonnaise.
Substitute
Substitute mahi-mahi or catfish steaks for the swordfish.
Use Your Broiler
Brush fish and vegetables with mayo mixture as directed. Place on rack of broiler pan. Broil, 5 to 7 inches from heat, 5 to 8 min. on each side or until fish flakes easily with fork and vegetables are crisp-tender. Serve as directed.

" this was delicious! i used lemon juice instead of lime and added this to the mayo along with italian seasoning and black pepper and then cooked it on the george foreman for 10 mins...i will definitely be making this again!"
