What You Need!

3 cups instant white rice, uncooked
3 cups  warm water
6 small boneless skinless chicken breast halves (1-1/2 lb.), 1/2 inch thick
1 can  (13-3/4 oz.) artichoke hearts, drained, quartered
2 cups chopped tomatoes (about 2 large)
1/2 cup  KRAFT Zesty Italian Dressing
1/4 cup pesto

Make It!

PREHEAT oven to 400°F. Mix rice and water; spoon evenly onto center of each of six large sheets of heavy-duty foil. Top each with 1 chicken breast. Cover evenly with the artichokes and tomatoes, then drizzle evenly with the combined dressing and pesto.

BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place packets in single layer in 15x10x1-inch baking pan.

BAKE 30 to 35 min. or until chicken is cooked through (170°F). Remove packets from oven; let stand 5 min. Place one packet on each of six dinner plates. Cut slits in foil with sharp knife to release steam before opening.

Cooking Know-How
If the chicken breast halves in your market are larger than 4 oz., they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear.
How to Safely Handle Raw Chicken
Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

" I read the comments and changed it a bit to flavor the rice better. I mixed the rice with the 2 1/3 water but added 2/3cup itlian dressing and salt to taste plus dried chopped garlic. I used sweet onion canned diced tomatos instead of fresh and since I didn't have regular pesto I used knorr pesto sauce and added extra artichokes. This dish turned out GREAT. I will definitly make it again and probably continue to use the pesto sauce. I find the use of foil packets a bit wasteful and kind of a pain so I will do the same just in a cassarole dish and cover it next time. This would make a lovely dish to serve to guests. "
