What You Need

1-1/2 cups flour
1-1/2 tsp.  CALUMET Baking Powder
1/2 tsp. salt
1/2 tsp.  ground cinnamon
1/4 tsp. baking soda
1 cup  BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 Granny Smith apple, finely chopped
1/2 cup  firmly packed brown sugar
1/4 cup oil
1   egg
1 tsp. vanilla

Make It

MIX flour, baking powder, salt, cinnamon and baking soda; set aside. Mix remaining ingredients in medium bowl. Add flour mixture; stir just until moistened.

SPOON into greased or paper-lined muffin pan, filling each cup 2/3 full.

BAKE at 400°F for 25 minutes or until golden brown.

Apple Cinnamon Scones: Drop dough by a scant 1/4 cup onto a greased cookie sheet, bake as directed. Makes 10 scones.

" The cottage cheese leaves a salty after taste and you don't even taste the cinnamon. I did add extra cinnamon, too, like others had recommended. Cream cheese would be a better replacement. "
