This was a big hit at my Book Club meeting. I used sweet red onion instead of the green onion and added some chopped fresh Basil. Go ahead and double the tomato topping part of the recipe. It's delicious the next day too.

These are so simple, but SO GREAT!!!! I don't really care for tomatoes, but I ate more of these than anyone else at the shower!! :-)

This is such an easy appetizer, and I love that you can use low fat toppings. The triscuits make the dish crunchy and flavorful and blend well with the veggies and cheese toppings.
