Balsamic Chicken Salad

My husband, who is not a salad fan thought this was delicious! I added a bit more balsamic to the dressing mixture to make it a little less thick. I also added craisins for a little sweetness.

This was a great salad. We cooked the chicken with a little fresh ground pepper, and it was wonderful.

I thought this was a great salad. I doubled the balsamic vinegar/mayo mix, because I prefer things to be more moist. It was delicious. It's something I know my kids would like too.

This recipe was good - not super outstanding, but certainly a good one. The dressing was good - it was hard to eat (especially for my kids) because spinach leaves (being the only leafy greens in this salad) are hard to pick up with a fork, as well as pepper pieces when also trying to get the chicken. I would probably make the dressing again, but use it on a mixture of spinach plus other greens.
