I made these for a playdate. The kids enjoyed them...moms did, too. I didn't dip them in chocolate, though. Instead I rolled the filling in sprinkles and crushed m&m's.

I actually have a question for anyone out there. Do you serve them frozen straight from the freezer or do you freeze them and then put them in the fridge so they aren't hard as a rock? I want to make them a couple days before I serve them so I am just wondering? Thanks!

I made these cookie sandwiches for a cousins graduation party, and they were a hit!! I will definitely make them again =) For some of them I covered half with the chocolate, and the others I covered the sides with sprinkles...everyone loved them and I continue to get more requests to make them again!

This recipe is very good but I am surprised that they do not recommend freezing the sandwiches BEFORE dipping. If you do not, they will be a squishy mess. So make them, freeze, then dip the next day when they are frozen. Much better results, don't they have a test kitchen so I don't have to go through this?!?
