These were great. I made them for a baby shower and everyone wanted the recipe. I made them the night before, covered them and put them in the refrigerator, then baked them about 20 minutes before the shower began.

This has potential...I added minced garlic, pepper and red pepper flakes. I think next time, I'm going to cut the oil in half and add sun-dried tomatoes in place of the diced tomatoes

These are sooooo good and only 25 calories. I use muffin tins and ramekins or custard cups to make them. Remove with small spatula after they cool. Then, cover and stick in fridge. Just before serving I top with shredded mozzerella and nuke for 10-15 seconds and sprinkle with paprika for color or sliver of pimento. Yum.
