Cream Cheese 'n Herb Cucumber Bites

This simple, but showy appetizer has been a hit at several parties. I add dill to the cream cheese for more flavor and sprinkle some on top for appearance. Also, I use paper towels to dry the cucumbers a bit before filling. It helps the cheese mixture to stick. I will keep making these!!

made these for a special anniversary. I was in charge of bringing the appetizers. I didn't have any leftovers. They were super easy to make also.

i did not care for the snack. i love bothe cucumbers and cream cheese but this was bland.

Tastes okay, but the water from the cucumber causes the cream cheese to move all over the place. In other words, it does not stick to the cucumber. Difficult to make it look presentable.

I added equal parts of sour cream to make this more than just cream cheese on a cucumber, then I also served it with sliced red, yellow and orange bell peppers.
