I've made this a few times. My husband loves it and its great for packing in lunch boxes. I made a couple changes by adding 1 tablespoon creamy peanut butter and 1 tablespoon red pepper flakes.

This salad is delicious. Because we enjoy Szechwan, I added one teaspoon dried red pepper to the dressing while blending. I will definitely make this again.

I also added chicken, and used sugar snap peas. It was very good, and quick to make. I made the baked crab rangoon with it, and the whole family enjoyed it.

The sauce was very very good. I also added some thin sliced chicken breast and I chopped up the peanuts for the final toss. I used sugar snap peas instead of sno peas... very nice.
