I agree about using Ritz crackers. The breadcrumbs fell off when I took it out of the pan. I'd add a bit of butter just to solidify them. I think I would add more smoked salmon, it was kind of "lost"...I added capers & 1/2 cup of sour cream and lot of fresh chopped chives. I used only 2 pkgs. of cream cheese. I thought it was great, but I'm making it for a New Year's Open House, and will put it in a 13" x 9" pan and cut into wedges. It really wasn't spreadable...more like a quiche consistency but delicious. Would make this a "Keeper"...

I followed the recipe exactly and it was dry and crumbly, and lacked compelling flavor. Everyone tried it once and didn't have any more. That was a very expensive waste of an appetizer. :(

The Smoked Salmon Cheesecake was easy to make although for the first time, the preparation time was 1/2 hour per recipe. My sister-in-law and I made two of these in my home for a bridal shower for 40 people. We agreed that the dry bread crumbs should be increased from 1 cup to 1 1/2 cup with 6 Tbsp. of butter per recipe. The texture was a little dry in the silver pan. The dark pan was perfect. We used identical ingredients and adjusted the baking temperature for the dark pan as directed. The flavor and presentation were lovely. The guys enjoyed it too after the shower.

I made this over the holidays and it was a huge success. Everyone loved it. It comes off as very gourmet but it is super easy to make.
