Blue Cheese-Horseradish Sauce

My fiance and I hosted a party during which we served this as a sauce for smoked beef brisket and deer tenderloin. It was a HUGE hit! Just be sure to warn YOUR "significant other" NOT to eat the blue cheese raw - it was quite traumatic for mine!
