I made this recipe with non-fat cream cheese and lowfat 4-cheese Italian shredded cheese to make it more healthy. It was a great hit. Others wanted the recipe. I would recommend just mixing the softened cream cheese and shredded cheese as it just got all gummed up in the beater.

Yum! I added some chicken that was marinated in red pepper italian dressing. Everyone liked them. Used the grill to heat and brown the tortillas.

Wonderful make ahead recipe. Lost the cook book to a caterer and have regretted it EVER since! Marvelous for any appetizer style occasion. Good eating!

A great quick, easy, and tasty dish! To make it even healthier, only use a little cream cheese to cover the tortilla and skip the cheddar cheese...it'll still be cheesy and yummy!
