Love these cupcakes!! I made two batches for my two boys' K class. I found that I liked using a cream cheese icing instead of the cool whip. If you can store them n the fridge until serving, maybe cool whip. I also iced the entire cupcake with blue icing and then added the "sand" and it was much easier!
