This was very good and so simple. I didn't use carrots because I didn't have any on hand, and I used regular lettuce, and it turned out very good! I will make this again. Thanks!

This is so yummy, I have had it on the tortilla and today I had it on crisp lettuce and rolled it up. This is my new fave lunch.
