Turtle Pumpkin Pie

I made this last year and it was a great hit. It is very rich so a single pie fed the whole family. I will make double this year and hide one till the grown kids leave so they don't take it home with them...selfish mom!

I was not the first one to try this. A local hospital made it for their food line. I also picked up a recipe card at the store saying I would never try that... NEVER SAY NEVER! So when I asked for the recipe it was the same on I picked up from the store. Awesome and easy to make!

I made this pie last night, and added a bit of ground ginger....it was so quick, easy and best of all, tastes great! It was a hit with everyone in my family, which is hard to do! Will definitely make again.

This pie was really good. Had a wonderful pumpkin flavor. I made for a church dinner and none was left. FYI -- be sure to make it the night before; it definitely takes a day to set up correctly so it doesn't run when you cut it.
