I would use saute 1 to 2 minced garlic in 2TBS of olive oil. season with salt and pepper, or red pepper flacks.pour over vegies then bake

I made this recipe last night for our dinner guest. Everyone loved it. They also said it was nice to have something different. I had some left over purple onion, so I added that. Will make again.

I love these recipies. I made mine in a skillet with butter and Italian dressing. Omitted the tomatoes. So good.
